Bee-line to the honeycomb

This beautiful block of natural honeycomb caught my eye when at market. It was so fresh and interesting, I had to try it. Light, smooth, and surprisingly delicate; this honeycomb spread easily over my baguette and was a perfect pairing with warm brie. Truly the bees knees.
Bees are amazing creatures; organized, focused, and dedicated to their colony. They work together to create the only insect generated food humans can eat - honey. Like all things worth appreciation, it's hard work producing honey. A single worker bee lives approximately 28 - 45 days and makes 1/12 of a teaspoon of honey in its life. For every 8 ounces of honey you purchase, approximately 400 bees flurried about for a lifetime collecting pollen. Once the worker bees collected the pollen and carried it back to the hive, it is carried by a group of worker bees in the hive and stored in the honey comb. The bees in the hive continually flutter their wings to aerate the hive and remove the moisture from the processed nectar. Only when the majority of the moisture has been removed, it is honey.
